Ingredients

For the Chocolate Sponge

  • All-purpose flour (maida): 1½ cup
  • Unsweetened cocoa powder: ½ cup
  • Baking powder: 1½ tsp
  • Baking soda: ½ tsp
  • Powdered sugar: ¾ cup
  • Condensed milk: ½ cup
  • Melted butter: ½ cup
  • Warm milk: ¾ cup (adjust as needed)
  • Chocolate essence: 1 tsp
  • Lemon juice or vinegar: 1 tsp

For the Chocolate Truffle Ganache

  • Dark chocolate (chopped): 250 g
  • Fresh cream: 200 ml
  • Butter: 1 tbsp

Instructions

Step 1: Prepare the Sponge

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, sift together flour, cocoa powder, baking powder, and baking soda.
  3. In another bowl, whisk melted butter, condensed milk, and powdered sugar until smooth.
  4. Add chocolate essence and lemon juice to the wet mixture.
  5. Gradually fold in the dry ingredients and add warm milk to form a smooth, lump-free batter.
  6. Pour the batter into a greased cake tin and bake for 30–35 minutes.
  7. Once baked, let it cool completely before demoulding.

Step 2: Make the Chocolate Truffle Ganache

  1. Heat the fresh cream in a pan (do not boil).
  2. Turn off the heat, add the chopped dark chocolate, and let it sit for 2–3 minutes.
  3. Add butter and whisk until smooth and glossy.
  4. Allow the ganache to cool slightly before spreading.

Step 3: Assemble the Cake

  1. Slice the sponge horizontally into 2–3 layers.
  2. Spread a generous layer of ganache between each slice.
  3. Cover the entire cake with ganache evenly.
  4. Chill in the refrigerator for at least 1 hour to set.
  5. Decorate with chocolate curls, choco chips, or a drizzle of melted chocolate.

Pro Tips

  • Do not over-mix the batter; it may make the cake dense.
  • For a richer taste, let the ganache rest overnight in the fridge.
  • To achieve a glossy bakery-style finish, drizzle some extra melted dark chocolate on top.
